01 - 2 large green bell peppers, sliced
02 - 1 red onion, sliced
03 - 2 New York Strip steaks, thinly sliced

15 - 2 chipotle peppers in adobo plus 1 tablespoon adobo sauce
16 - 3 tablespoons red wine vinegar
17 - 2 tablespoons honey
18 - 1 tablespoon minced garlic

20 - 1/2 teaspoon black pepper
21 - 1/2 teaspoon dried oregano
22 - 1/4 teaspoon ground cumin
23 - 2/3 cup neutral oil (such as canola or sunflower)

# How to Make It:

01 - Slice green bell peppers and red onion into strips. Toss with half the olive oil, salt, black pepper, and garlic powder until evenly coated.
02 - Place seasoned peppers and onion in the air fryer basket. Cook at 200°C for 13 minutes or until tender and slightly caramelized, shaking halfway through.
03 - Slice NY Strip steaks into thin strips. Combine with remaining olive oil, salt, black pepper, cumin, dried cilantro, chili powder, and cayenne pepper. Squeeze lime juice over the meat and mix thoroughly until the steak is well coated.
04 - Transfer the seasoned steak to the preheated air fryer basket. Cook at 200°C for 5 to 7 minutes or until steak reaches desired doneness. Remove and set aside.
05 - In a food processor, blend chipotle peppers, adobo sauce, red wine vinegar, honey, minced garlic, salt, black pepper, oregano, and cumin until smooth. With the processor running, slowly drizzle in the neutral oil until the vinaigrette is emulsified.
06 - Warm flour tortillas. Fill each tortilla with a portion of peppers, onions, and steak. Drizzle with chipotle vinaigrette and garnish with sour cream to taste.
