Easy Apple Butter Zucchini Bread (Print Version)

# Ingredients:

01 - 1 stick salted butter, melted
02 - ½ cup brown sugar
03 - ¼ cup apple butter
04 - ½ cup plain Greek yogurt, at room temperature
05 - 3 eggs, at room temperature
06 - 1 tbsp vanilla extract
07 - 1 cup grated zucchini
08 - 1 ¾ cup whole wheat or all-purpose flour
09 - 3 tsp baking powder
10 - 1 tsp salt

11 - ¼ cup dark brown sugar
12 - 1 tbsp all-purpose flour
13 - 2 tsp cinnamon
14 - 1 tbsp salted butter, melted

→ Cinnamon Butter

15 - 1 stick salted butter, at room temperature
16 - ¼ cup maple syrup or honey
17 - ½ tsp vanilla extract
18 - 1 tsp cinnamon
19 - pinch of sea salt

# Steps:

01 - Preheat the oven to 350°F (175°C). Line a 9×5 inch bread pan with parchment paper.
02 - In a bowl, whisk together the melted butter, brown sugar, apple butter, yogurt, eggs, and vanilla. Stir in the shredded zucchini.
03 - Add the flour, baking powder, and salt to the wet mixture. Mix until combined.
04 - Pour the batter into the prepared pan. If desired, swirl in 2-3 tablespoons of apple butter, leaving streaks of apple butter throughout the batter.
05 - Mix the butter, brown sugar, flour, and cinnamon. Arrange the clumps over the batter.
06 - Bake in the preheated oven for 60-65 minutes or until the center is just set.
07 - In a bowl, beat the butter, maple syrup, vanilla, cinnamon, and a pinch of salt. Serve with the warm zucchini bread.
