Add vanilla bean ice cream to a tall glass, filling it approximately two-thirds full.

Gently pour chilled apple cider or sparkling cider over the ice cream. If using sparkling cider, pour slowly to control foaming.

Top with red apple slices, a cinnamon stick, and whole star anise. Sprinkle cinnamon sugar over the glass and float.
