Cook bacon till it’s crispy using whatever works for you—skillet, oven, or microwave. Lay it on paper towels to get rid of the extra grease. Once it cools, crumble into bits and keep aside.

Grab a medium bowl and mix up cream cheese (softened), cheddar cheese, bacon chunks, onion powder, and garlic powder. Keep stirring till it’s all smooth and evenly blended. If it feels too stiff, microwave the bowl for 10 to 15 seconds to soften things.

Pick out the biggest and most intact Dorito chips from the bag. Slowly open up a small pocket along the edge of each one, being careful not to snap them apart completely.

Spoon or pipe the cheesy mix into each chip. You can use a piping bag with a small tip, a ziplock with the corner clipped, or even a small butter knife. Aim for 1–2 tsp of filling, depending on how big the chip is, and avoid overloading.

Place your filled chips in a single layer on a tray or plate, making sure they don’t stack. Put them in the fridge for 20 minutes or more so the filling sets up nicely.

Once chilled, sprinkle some chopped chives on top if you’d like. Serve them cold or let them come to room temp. Don’t leave them out too long to keep the textures and flavors fresh.
