# Ingredients:

02 - 2 tablespoons of butter
03 - A pinch of sea salt and black pepper
04 - 1/8 teaspoon of cayenne pepper
05 - 1/2 teaspoon of garlic seasoning

→ Wrap Fillings

06 - 4 large tortillas, warmed up
07 - 1 cup of grated cheddar cheese
08 - A couple of crisp bacon slices, about 5, sliced and cooked
09 - 2 cups of cooked potatoes, roasted or pan-fried (can be store-bought)
10 - A cup of breakfast sausage, cooked and chopped

→ Extras for Serving

11 - Fresh salsa
12 - A dollop of sour cream

# Steps:

01 - Heat the butter in your skillet over medium flame. Toss in the eggs, black pepper, salt, and spices. Stir gently and cook through until the eggs are set and no longer runny.
02 - Spread out a tortilla on a flat surface. Pile up half a cup of scrambled eggs, followed by the same amount of potatoes, and a quarter cup of shredded cheddar. Toss in some bacon slices or sausage chunks, about a quarter cup. Roll it snugly, then toast the rolled tortilla in a pan with butter or a splash of oil until it's golden on the outside. Alternatively, bake it at 350°F for 10 minutes. Spoon salsa and sour cream on the side to serve.

# Notes and Tips:

01 - Fresh, high-quality ingredients like fluffy eggs and flavorful meats really make a difference.
02 - Heating up your tortillas beforehand helps prevent tearing while rolling.
03 - Spice it up to your liking with extras like hot sauce or fresh salsa.
04 - Roll everything tightly for a tidier final look.
