01 - 6 eggs, large size
02 - 2 tbsp butter
03 - A pinch of cayenne
04 - 1/2 tsp garlic powder
05 - Salt and black pepper, add to your liking

06 - 4 large warmed tortillas
07 - Grated cheddar cheese, about 1 cup
08 - 2 cups crispy or roasted potato cubes (make your own or buy pre-made)
09 - 5 cooked and sliced bacon strips
10 - 1 cup cooked breakfast sausage, chopped up

# Steps:

01 - Heat butter in a pan at a medium setting. Break the eggs into a bowl and season with spices. Pour them into the pan, mixing while cooking until the eggs are firm.
02 - Start with a warm tortilla. Add about 1/2 cup of scrambled eggs, followed by 1/2 cup of potatoes and 1/4 cup of cheese. Sprinkle on bacon or sausage, around 1/4 cup. Fold tightly and either toast it in a buttered skillet till golden or pop it in the oven at 350°F for 10 minutes. Pair it with your favorite salsa and dollop of sour cream.
