In a nonstick skillet, fry the chopped bacon till it’s crispy. Take it out and set on the side.

Use the same pan to cook tomatoes and bell peppers for a couple of minutes until soft.

Beat the eggs, then cook them with the veggies in the pan until fluffy.

Return the crispy bacon to the pan, sprinkle cheddar cheese on top, and give it a little stir.

Microwave the tortillas for 20 seconds so they’re warm and flexible.

Spoon the egg mixture onto the tortillas’ center. Fold in the edges, then roll tightly into burritos.

With the seam side down, toast the burritos in a pan until golden and crunchy.

Eat them warm, or wrap in foil and freeze for later meals.
