→ Bacon and Onions

09 - A pound of bacon
10 - One-third cup of maple syrup from Wisconsin
11 - Black pepper to taste
12 - A sprinkle of chili powder
13 - 2 or 3 yellow onions

# Steps:

01 - Stir together ground beef, caramelized onions, and seasonings gently. Shape into 4 portions and leave them to rest for roughly 15 minutes.
02 - Warm up a griddle, press the meat balls flat, and cook. Flip the patties twice so they crisp up at the edges. Add yellow mustard to the tops before flipping the last time and cook through.
03 - Layer the patties with bacon, cheese, and onions. Once the cheese is gooey, place them onto toasted buns brushed with butter. Add a dab of mustard for a spicy kick before serving.
04 - Place strips on a wire rack over a pan. Start in a cold oven, set to 350°F. Mix together 3 tablespoons of syrup, pepper, and chili powder. Brush the bacon with the mix while baking. Let cool after it’s done.
05 - Chop yellow onions and sauté on low heat with butter. Add a little syrup and pepper. Stir and cook until sweet and golden brown.

# Notes and Tips:

01 - Let the meat rest for 15 minutes to help flavor and texture improve.
02 - Baking bacon in a cold oven avoids mess and cooks it evenly.
03 - Cooking onions low and slow makes them sweet and soft.
