Banana Bread Olive Oil Almond (Print Version)

Almond flour banana bread with olive oil, pineapple, coconut, nuts, and a bright citrus finish.

# Ingredients:

→ Wet Ingredients

01 - 2 large ripe bananas, mashed
02 - 1/4 cup extra virgin olive oil
03 - 1/4 cup unsweetened applesauce
04 - 1/4 cup honey or pure maple syrup
05 - 2 large eggs or flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
06 - 1 tsp pure vanilla extract

→ Dry Ingredients

07 - 1 1/2 cups almond flour or spelt flour
08 - 1 tsp baking soda
09 - 1/2 tsp baking powder
10 - 1/2 tsp cinnamon

→ Optional Add-ins

11 - 1/4 cup unsweetened shredded coconut
12 - 1/4 cup crushed pineapple, well-drained
13 - 1/4 cup chopped walnuts or pistachios
14 - Zest of 1 lemon or orange

# Steps:

01 - Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line with parchment paper.
02 - In a large bowl, whisk together mashed bananas, olive oil, applesauce, honey or maple syrup, eggs, and vanilla extract until smooth.
03 - In a separate bowl, mix the almond flour or spelt flour, baking soda, baking powder, and cinnamon.
04 - Slowly fold dry ingredients into the wet ingredients until just combined. Do not overmix.
05 - Gently stir in any optional tropical add-ins like pineapple, coconut, or nuts.
06 - Pour the batter into the prepared loaf pan and smooth the top.
07 - Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
08 - Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
