# Ingredients:

→ Banana Dough

01 - 3/4 cup milk warmed to 110℉
02 - 2 1/4 tsp active dry yeast (11 grams, 1 whole packet)
03 - 1 large egg, room temperature and lightly beaten
04 - 2/3 cup mashed bananas (mash 2 bananas and then measure)
05 - 5 1/4 cups all-purpose flour
06 - 1 tsp salt
07 - 1/4 cup white granulated sugar
08 - 10 tbsp unsalted butter, room temperature and cubed

→ Cinnamon Banana Filling

09 - 1/2 cup unsalted butter, room temperature
10 - 3/4 cup brown sugar, packed (light or dark)
11 - 1 tbsp ground cinnamon
12 - 2 bananas, sliced thinly

→ Cream Cheese Icing

13 - 4 oz cream cheese, room temperature
14 - 4 tbsp unsalted butter, room temperature
15 - 1 cup powdered sugar, sifted
16 - 1 tsp pure vanilla extract

# Steps:

01 - Heat the milk to 110℉ and sprinkle the yeast on top. Let it rest for 10 minutes.
02 - Combine flour, sugar, and salt in a large bowl. Add cubed butter and knead into the mixture until the butter pieces are the size of peas.
03 - Add the milk with yeast, beaten egg, and mashed bananas to the dry mixture. Mix on low speed using a mixer with a dough hook until a dough forms. Knead on medium speed for 5 minutes.
04 - Preheat the oven to 200℉ and turn it off. Place the dough in a greased bowl, cover with a towel, and let it rise in the oven with the door cracked open for 1 hour.
05 - Mix the butter with a hand mixer on high speed until smooth. Add brown sugar and cinnamon, mixing on medium speed for 1 minute.
06 - Roll the dough on a floured surface into a rectangle about 1/4 inch thick. Spread the cinnamon filling evenly over the dough with a spatula and top with sliced bananas.
07 - Roll the dough into a log from the short side. Cut off uneven ends and slice into 12 even rolls using a serrated knife.
08 - Place the rolls into a greased 9x13-inch baking pan. Cover with a towel and let them rise for 20 minutes. Preheat the oven to 375℉.
09 - Bake the cinnamon rolls for 28-33 minutes or until the tops are lightly golden brown.
10 - Beat the butter and cream cheese on high speed for 1 minute. Add powdered sugar and vanilla, mixing on low speed until combined, then beat on high speed until creamy.
11 - Spread the cream cheese icing evenly over each roll before serving.

# Notes and Tips:

01 - Ensure all dairy ingredients are at room temperature for better incorporation.
02 - Flour should be spooned and leveled or measured with a scale to avoid compacting.
