In a medium bowl, combine the chia seeds, milk, vanilla extract, and a pinch of salt. Stir well to ensure the chia seeds are evenly distributed.

Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and form a pudding-like consistency.

When ready to serve, peel and slice the ripe banana.

Divide the chia pudding into two servings. Top each serving with sliced banana and a tablespoon of peanut butter. Drizzle with maple syrup if desired. Stir before eating.
