Banana Turon Filipino Lumpia (Print Version)

Crispy, sweet Filipino-style treat with bananas and jackfruit.

# Ingredients:

01 - 4 pieces ripe baby bananas or plantains
02 - 2 to 3 arils ripe jackfruit, cut into strips
03 - 4 to 5 tablespoons light brown sugar
04 - 16 pieces lumpia wrappers, separated
05 - 1 to 2 tablespoons olive oil
06 - Water for sealing lumpia wrappers

# Steps:

01 - Pre-heat Air Fryer to 370°F (188°C) and set the timer for 16 minutes.
02 - Cut baby bananas into four pieces, lengthwise.
03 - Lay one lumpia wrapper on a large plate in a diamond shape. Lightly brush with water.
04 - Place one slice of baby banana and one strip of jackfruit at the center of the wrapper, then sprinkle lightly with brown sugar. Fold each side of the wrapper, roll tightly, and seal edges by brushing with water.
05 - Mix the remaining light brown sugar with one tablespoon of water in a small bowl.
06 - Drizzle the brown sugar glaze over each roll. Repeat for the remaining ingredients, assembling a total of 16 rolls.
07 - Gently transfer the 16 rolls onto two Air Fryer trays. Lightly brush each roll with oil on all sides.
08 - Insert trays into the middle cooking chamber. Flip each roll halfway through cooking.
09 - Remove trays once the lumpia wrappers are golden brown. Arrange on a platter and serve as is or with ice cream for Turon à la Mode.

# Notes and Tips:

01 - Maintain uniform cuts for the fruit and tightly roll the lumpia wrappers for best results.
02 - Spring roll wrappers can be substituted for lumpia wrappers if unavailable.
03 - Air Fryers may vary; monitor closely during initial cooking trials.
