BBQ Bacon Pineapple Burgers (Print Version)

Oven-cooked burgers packed with pineapple, crispy bacon, and tangy BBQ sauce. Sweet, smoky, and super simple to make.

# Ingredients:

→ Burgers

01 - 1 lb ground beef (93% lean, 7% fat)
02 - 2 tablespoons barbecue sauce for mixing, plus 2 tablespoons for basting
03 - 1/4 teaspoon ground black pepper
04 - 1/2 teaspoon table salt

→ Toppings

05 - 4 fluffy brioche burger buns
06 - 4 pineapple slices, about 1/2 inch thick, with the tough core removed
07 - 8 raw smoked bacon slices

# Steps:

01 - Heat the oven to 400°F and cover a big baking sheet with foil. Place a safe-to-heat wire rack on top.
02 - Stir the ground beef, 2 tablespoons of sauce, salt, and pepper together in a big bowl. Be gentle so the meat stays tender.
03 - Split the beef into four pieces, around 4 ounces each. Flatten into patties that are 3 ½ inches wide and ½ inch thick.
04 - Layer two bacon strips in a criss-cross shape. Place a patty in the middle, add a pineapple slice on top, and fold the bacon around it. Use toothpicks to hold it together.
05 - Do the bacon wrapping for all four patties, then set them on the prepped baking sheet.
06 - Let the burgers bake for 15 minutes. Take them out, brush on the extra sauce, and bake for 10-15 minutes more, or until they're 160°F inside.
07 - While the burgers bake, you can toast your buns if you want.
08 - Once out of the oven, let the burgers rest for 5 minutes. Serve on buns and add toppings like cheese, onions, or lettuce if you like.

# Notes and Tips:

01 - Make sure the ground beef reaches 160°F-165°F inside to stay safe, as recommended by USDA.
02 - If fresh pineapple isn't handy, canned slices work too. Pat them dry first.
03 - Stick with regular or center-cut bacon. Thick-cut may not crisp up as well.
