BBQ Chicken Pasta Salad (Print Version)

Juicy chicken, pasta, BBQ sauce, sweet corn, and fresh veggies come together for a flavorful summer side.

# Ingredients:

→ Chicken and Vegetables

01 - 2 tablespoons vegetable oil
02 - 2 boneless, skinless chicken breast halves
03 - 1 red onion, chopped
04 - 1/2 jalapeno pepper, de-seeded, de-veined, and minced
05 - 1 red bell pepper, seeded and diced
06 - 1 orange bell pepper, seeded and diced
07 - 1 cup corn
08 - 15-ounce can black beans, rinsed and drained
09 - 1/4 cup minced fresh cilantro

→ Pasta and Dressing

10 - 1 pound small pasta shells
11 - 1 cup BBQ sauce
12 - 1 cup mayonnaise
13 - 1/2 teaspoon kosher salt
14 - 1/4 teaspoon coarse ground black pepper

# Steps:

01 - Heat vegetable oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4-6 minutes on each side until fully cooked.
02 - Remove the chicken from the skillet. Add onions and minced jalapenos to the skillet and sauté for 2-3 minutes until softened.
03 - Boil a large pot of water and cook the pasta shells one minute shy of the package instructions, then drain and rinse with cool water.
04 - In a large mixing bowl, combine BBQ sauce, mayonnaise, kosher salt, and black pepper. Stir until smooth.
05 - Chop the cooked chicken into bite-sized pieces. Add the chicken, sautéed onions, jalapenos, red and orange bell peppers, corn, black beans, and cilantro to the bowl with the dressing. Toss everything together until well combined. Serve immediately.
