Beef and Bean Enchiladas (Print Version)

Hearty beef, beans, and cheddar fill saucy tortillas for comforting Mexican-inspired flavor loved by all.

# Ingredients:

01 - 1 1/2 lb ground beef
02 - 1 Tbsp dried minced onion flakes or 1 small onion, diced
03 - 1 (16 oz) can refried beans
04 - 1 package taco seasoning
05 - 3 (10 oz) cans enchilada sauce
06 - 12 (6-inch) corn tortillas
07 - 3 cups shredded cheddar cheese

# Steps:

01 - Preheat oven to 350°F. Lightly spray a 9x13-inch pan with cooking spray.
02 - In a large skillet, brown ground beef. Drain fat. Return meat to skillet. Stir in onion flakes, refried beans, and taco seasoning. Cook over low heat until thoroughly heated. Set aside.
03 - Heat enchilada sauce in a saucepan over medium heat. Pour one cup of sauce in the bottom of the 9x13-inch pan.
04 - Wrap tortillas in a wet paper towel. Microwave for 45-60 seconds, until tortillas are soft. Brush tortillas with enchilada sauce on both sides.
05 - Spoon approximately 1/3 cup of meat mixture down the center of each tortilla. Top with one tablespoon of cheese. Roll up tortilla and place seam side down in the 9x13-inch pan. Repeat with remaining tortillas.
06 - Pour remaining sauce over tortillas. Top with remaining cheese. Bake for 15-20 minutes, until cheese is melted and enchiladas are heated thoroughly.

# Notes and Tips:

01 - Wrapped tortillas in a wet paper towel to soften them ensures pliability for rolling.
02 - Enchiladas are also excellent reheated for leftovers.
