01 - 2 Romano peppers, deseeded and sliced thin (or bell peppers)
02 - 1.8 pounds white potatoes, peeled and cut into 1/4-inch slices

05 - 1.1 pounds lean ground beef
06 - 1 yellow onion, chopped finely
07 - 2 garlic cloves, minced

# How to Make It:

01 - Slice the potatoes in half lengthwise and then into 1/4-inch thick pieces. Chop onion and parsley finely, and mince the garlic. Slice the deseeded peppers into thin strips.
02 - In a big nonstick skillet, heat up the olive oil and butter over medium-high heat. Toss in the potato slices and cook them for about 6 minutes, flipping them until they turn golden brown on all sides. Set them aside.
03 - In that same skillet, add the sliced peppers and sauté for 3 minutes until they’re tender. Crumble the ground beef into the skillet and cook for about 2 minutes until it begins to brown.
04 - Stir in the minced garlic and chopped onion with the beef and peppers. Cook for around 2 minutes until it smells great. Add in the paprika, black pepper, Italian seasoning, salt, and chili flakes. Mix in the tomato paste until it’s blended well.
05 - Add back the cooked potatoes and chopped parsley to the skillet. Mix gently to combine everything. Pour in the chicken broth, cover it up, and let it cook over medium heat for 10 minutes or until the potatoes can be easily pierced with a fork.
06 - Take off the lid and let it simmer until most of the broth has evaporated. Sprinkle the grated cheddar cheese on top, cover it again, and let it melt completely before serving.
07 - Top it off with some extra parsley and a sprinkle of chili flakes if you like. Serve it hot, paired with a fresh green salad.
