Blueberry Banana Baked Oatmeal Cups (Print Version)

# Ingredients:

01 - 3 cups old-fashioned rolled oats
02 - 2 teaspoons baking powder
03 - 1/2 teaspoon salt
04 - 1 teaspoon cinnamon
05 - 1 cup mashed bananas (2-3 bananas)
06 - 1 egg
07 - 1 teaspoon vanilla
08 - 1/2 cup honey (or maple syrup)
09 - 2/3 cup almond milk (or milk of your choice)
10 - 1 and 1/2 cups of blueberries (fresh or frozen)

# Instructions:

01 - Preheat oven to 350°F. Grease standard muffin pan or line with paper liners.
02 - In a large bowl, combine mashed bananas, egg, honey, vanilla, and milk. Whisk well.
03 - Add rolled oats, salt, baking powder, and cinnamon. Whisk until evenly combined.
04 - Fold in blueberries gently.
05 - Fill muffin cups about 3/4 full. Add extra blueberries on top if desired. Bake for 25-30 minutes, until toothpick inserted comes out clean.

# Notes:

01 - Store in refrigerator for up to 5 days
02 - Can use fresh or frozen blueberries (no need to thaw)
03 - Allow to cool completely before storing to prevent sogginess
