Broccoli Grape Pasta Salad (Print Version)

Creamy salad with broccoli, grapes, pasta, and walnuts in a zesty dressing.

# Ingredients:

01 - 2 teaspoons kosher salt
02 - 1 pound broccoli florets
03 - 1/2 pound dry farfalle pasta
04 - 1 cup walnut halves, toasted
05 - 1 cup sharp white cheddar cheese, shredded
06 - 1/2 cup thinly sliced red onion
07 - 2 cups red grapes, halved if large

→ Dressing

08 - 1 cup mayonnaise
09 - 1/2 teaspoon onion powder
10 - 1/2 teaspoon garlic powder
11 - 1 teaspoon celery salt
12 - 1 teaspoon poppy seeds
13 - 1/2 teaspoon white pepper
14 - 1/2 teaspoon dry mustard
15 - 1 tablespoon granulated sugar
16 - 1 tablespoon cider vinegar
17 - 1 tablespoon extra-virgin olive oil

# Steps:

01 - Place a 5-6 quart pot of water on to boil. Fill a large bowl with ice water. Once water is boiling, add kosher salt and then the broccoli. Blanch for 90 seconds, then transfer to the ice water bath using a spider or strainer.
02 - Bring the water back to a boil and add the pasta. Cook according to package directions. Once cooked, drain and cool with cold running water.
03 - Remove broccoli from the ice water bath and dry thoroughly on paper towels, squeezing out any excess water. Shake off excess water from the pasta and dry with paper towels.
04 - In a large bowl, combine pasta, broccoli, toasted walnuts, shredded cheddar cheese, red onion, and grapes.
05 - In a small bowl, whisk together mayonnaise, onion powder, garlic powder, celery salt, poppy seeds, white pepper, dry mustard, sugar, cider vinegar, and olive oil.
06 - Pour the dressing into the large bowl with the other ingredients. Mix thoroughly and refrigerate until ready to serve.
