→ Salad Vegetables

02 - 1 cup shredded carrots
03 - 4 cups shredded green cabbage
04 - 3/4 cup chopped fresh cilantro
05 - 2 cups shredded red cabbage
06 - 1 jalapeño, diced and seeded
07 - 1 red bell pepper, julienned thin
08 - 1/2 cup diced green onions

→ Dressing

09 - 1 batch sesame ginger dressing

→ Toppings

10 - Crispy wonton strips, optional
11 - 1/3 cup toasted sliced almonds
12 - 1/3 cup roasted cashew halves
13 - Sliced green onions, for garnish
14 - Jalapeño slices, for garnish
15 - Extra chopped cilantro, for garnish
16 - Sesame seeds, for garnish

# How to Make It:

01 - Start by marinating the chicken. After grilling, let it cool a bit and cut it into thin slices.
02 - Mix together the sesame ginger dressing and put it aside for later use.
03 - Grab a big bowl and toss together the green and red cabbage, diced jalapeño, green onions, carrots, cilantro, and bell pepper. Make sure everything's well mixed.
04 - Drizzle the sesame ginger dressing over the vegetable mix. Stir everything well so everything's coated. Cover it up while you finish the chicken.
05 - Scoop the salad onto a large platter. On top, add the chicken, toasted almonds, roasted cashews, cilantro, sesame seeds, green onions, and jalapeño slices. If you want, throw on some crispy wonton strips.
06 - Serve right away as a main dish for four people or as a side for six.

# Extra Information:

01 - If you're looking for a vegetarian or vegan option, skip the chicken and try firm tofu or canned chickpeas instead.
02 - Using pre-shredded carrots can add some nice texture to your salad.
