In a small bowl, whisk together olive oil, half of the Cajun spice, half of the paprika, garlic powder, onion powder, and salt and pepper to taste. Reserve the extra mixture for later use.

Place each corn cob on a piece of foil. Brush each cob generously with the spice mixture and wrap tightly in foil.

Preheat the oven to 218°C (425°F). Place the wrapped corn on a baking sheet and bake for 30 minutes. For softer corn, brush with additional oil-spice mixture after 30 minutes and bake for another 20-25 minutes.

In a medium bowl, mix mayonnaise, sour cream, the remaining Cajun spice and smoked paprika, lime juice, and salt and pepper to taste.

Once the baked corn is slightly cooled, brush with the leftover spice mixture (optional) and then generously coat with the mayo mixture. Optional: Grill the corn on a lightly greased grill pan until slightly charred.

Top the corn with crumbled feta or cotija cheese, chopped cilantro, and a sprinkle of Cajun spice before serving.
