One-Pan Cajun Sausage Rice Skillet (Print Version)

# Ingredients:

01 - 12 oz smoked sausage (Andouille or Kielbasa), sliced
02 - 1 cup long-grain white rice, rinsed
03 - 1 red bell pepper, diced
04 - 1 green bell pepper, diced
05 - 1 medium onion, diced
06 - 3 cloves garlic, minced
07 - 1 1/2 cups chicken broth
08 - 2 tablespoons Cajun seasoning
09 - 1 tablespoon olive oil
10 - Salt and pepper to taste

→ Garnish

11 - Fresh parsley, chopped
12 - Green onions, sliced
13 - Hot sauce for serving

# Instructions:

01 - Slice sausage into 1/2-inch rounds. Dice peppers and onion, mince garlic. Rinse rice until water runs clear.
02 - Heat olive oil in large skillet over medium heat. Brown sausage 5-7 minutes until crispy on edges. Remove and set aside.
03 - In same skillet, sauté peppers and onion for 3 minutes. Add garlic, cook 1 minute more.
04 - Add rice, toast 2 minutes. Add broth and Cajun seasoning. Bring to boil, reduce heat, cover and simmer 15-20 minutes until rice is tender.
05 - Return sausage to skillet, stir to combine. Cook 3-5 minutes more. Garnish with parsley and green onions.

01 - Can use any type of smoked sausage
02 - Adjust Cajun seasoning to taste
03 - Great for leftovers
