Cake Mix Spice Cookies (Print-Friendly Version)

# Ingredients You'll Need:

01 - 425 grams (15 oz) spice cake mix
02 - 2 large eggs
03 - 120 millilitres (½ cup) olive oil or vegetable oil

→ Topping

04 - 45 grams (about ⅓ cup) coarse granulated sugar, for coating

# How to Make It:

01 - Preheat the oven to 175°C (350°F). Line a baking sheet with parchment paper.
02 - In a large mixing bowl, combine the spice cake mix, eggs, and oil. Stir until a uniform dough forms.
03 - Scoop out portions of dough and roll each into balls, approximately 3 centimetres in diameter.
04 - Roll each dough ball in coarse granulated sugar, ensuring even coverage.
05 - Place the sugared dough balls onto the prepared baking sheet, leaving space between each for spreading.
06 - Bake in the centre of the preheated oven for 10–12 minutes, until the bottoms are lightly browned.
07 - Allow cookies to rest on the baking sheet for 1–2 minutes, then transfer to a wire rack to cool completely.
