Preheat the oven to 175°C (350°F). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the spice cake mix, eggs, and oil. Stir until a uniform dough forms.

Scoop out portions of dough and roll each into balls, approximately 3 centimetres in diameter.

Roll each dough ball in coarse granulated sugar, ensuring even coverage.

Place the sugared dough balls onto the prepared baking sheet, leaving space between each for spreading.

Bake in the centre of the preheated oven for 10–12 minutes, until the bottoms are lightly browned.

Allow cookies to rest on the baking sheet for 1–2 minutes, then transfer to a wire rack to cool completely.
