Mix white sugar with just enough water to make wet sand in a small pot. Turn heat to high until it boils. Don't stir it. Just wet a pastry brush and wipe down the sides to get rid of any sugar bits.

In another small pot, warm the whipping cream on medium-high until it steams but doesn't boil.

Let the sugar keep boiling until you see an amber shade. Take it off the heat and slowly mix in the hot cream until it's smooth, taking about 3-5 minutes. Add the sea salt and mix. Let it cool down.

Turn your oven to 175°C and put the rack in the middle. Put parchment on a baking sheet with edges.

Lay out your apple slices in one layer on your lined baking sheet.

Melt the butter in a pot over medium-low heat. Throw in dark sugar and cinnamon, giving it a stir now and then until sugar melts, roughly 5-6 minutes.

With your pastry brush, cover both sides of each apple slice with your sweet cinnamon mix. Put them in the oven and bake until soft, about 30 minutes.

Scoop vanilla bean ice cream into 4 bowls. Top each with the baked apple slices and plenty of salty caramel sauce.
