Preheat the oven to 350°F. Grease an 8-inch pan or line the bottom with parchment paper.

In a large mixing bowl, stir together the flour, sugar, cinnamon, salt, and baking powder. If using unsalted butter or oil, add an additional 1/4 tsp salt.

Cut in the softened butter or oil using a pastry cutter, fork, or food processor until small pea-sized crumbles form. If it's too dry, add water slowly.

Press about two-thirds of the dough mixture firmly into the prepared pan.

Toss diced apples with cornstarch in a separate bowl. Spread the apples evenly over the crust in the pan.

Finely chop the caramels or dates and spread them evenly on top of the apples.

Sprinkle the reserved dough over the apple and caramel layers.

Bake for 50 minutes. Let the bars cool fully before slicing.

If using coconut oil, chill bars to aid slicing. Store leftovers in a covered container in the refrigerator for up to 5 days.
