Carrot Cake Bars Moist Fluffy (Print Version)

# Ingredients:

01 - 1 cup (200g) shredded carrot
02 - 1/2 cup applesauce or crushed pineapple or mashed banana
03 - 1/4 cup oil or additional applesauce for fat free version
04 - 2 teaspoons vinegar
05 - 2 teaspoons pure vanilla extract
06 - 1 1/2 cups flour
07 - 1 1/2 teaspoons cinnamon
08 - 3/4 teaspoon salt
09 - 1/2 teaspoon baking soda
10 - 1/2 cup sugar or packed coconut sugar or xylitol
11 - 1 pinch ground ginger and cloves (optional)
12 - 1/4 cup raisins (optional)
13 - 1 handful shredded coconut, crushed walnuts or pecans (optional)
14 - Cream cheese frosting or your favorite frosting or toppings

# Steps:

01 - Preheat the oven to 350°F (175°C). Grease an 8-inch square pan or line the bottom with parchment paper. Alternatively, use a sheet pan or a 9x13-inch pan for thinner bars.
02 - Stir all ingredients in a large bowl until just evenly mixed.
03 - Spread the mixture into the prepared pan. Bake for 30 minutes in an 8-inch pan or 15 minutes on a sheet pan. The bars are done when a toothpick inserted into the center comes out mostly clean.
04 - Let the bars cool fully before frosting. Loosely cover the pan with a towel and refrigerate. The flavor and texture improve after a day.
05 - Store any leftovers covered in the refrigerator or freezer for best freshness.
