03 - ¼ cup granulated sugar
04 - 1 large egg
05 - 1 teaspoon vanilla extract
06 - 1 ¼ cups all-purpose flour
07 - ½ teaspoon baking soda
08 - 1 teaspoon cinnamon
09 - ¼ teaspoon nutmeg
10 - ¾ cup shredded carrots
11 - ½ cup chopped pecans (optional)

→ Cream Cheese Filling

12 - 4 oz cream cheese, softened
13 - 2 tablespoons unsalted butter, softened
14 - 1 cup powdered sugar
15 - ½ teaspoon vanilla extract

# Steps:

01 - Preheat oven to 350°F and line baking sheets with parchment paper.
02 - Cream butter, brown sugar, and granulated sugar until light and fluffy.
03 - Mix in the egg and vanilla extract until smooth.
04 - Stir in flour, baking soda, cinnamon, nutmeg, and salt.
05 - Fold in shredded carrots and pecans if using.
06 - Scoop dough onto baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes until edges are set and centers are soft.
07 - Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
08 - Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla.
09 - Spread frosting on one cookie and sandwich with another.
