Set your oven to 375°F (190°C) to preheat.

In a big pan over medium-high heat, cook up the sausage. Break it apart as it cooks, letting it brown nicely for 4-5 minutes. Drain off the grease after cooking.

Melt 1 tbsp of butter in the pan over medium heat. Take 10 eggs, 1/4 cup of milk, and a pinch of salt and pepper—whisk those together. Pour into the pan and cook while moving them around until they're just set.

Lay 6 slices of Texas toast in the bottom of a 9x13-inch pan. Add a slice of American cheese on each piece of bread.

Spoon on the scrambled eggs and browned sausage. Then place another slice of cheese on top of the mixture.

In a medium bowl, combine the rest of the eggs (8), remaining 3/4 cup of milk, and the mustard powder. Stir well, then carefully pour it all over the layers in the pan.

Cover the dish by adding the last slices of Texas toast on top.

Melt the final 3 tbsp of butter. Use it to generously brush the tops of the bread.

Cover the baking dish with foil, then pop it in the oven for 20 minutes.

Take the foil off and put it back in the oven to bake another 20 minutes till golden.
