In large bowl, combine cooked rice, steamed broccoli, 1 1/2 cups cheese, optional chicken, soup, milk, and seasonings.

Pour mixture into prepared dish. Top with remaining 1/2 cup cheese.

Mix breadcrumbs or crushed crackers with melted butter. Sprinkle over casserole.

Bake uncovered 25-30 minutes until bubbly and golden brown. Cool 5 minutes before serving.
