Preheat oven to 400 degrees Fahrenheit. Slice the bread in half lengthwise. Cut two sheets of foil about 24 inches long each and place them side by side with a slight overlap on a rimmed cookie sheet. Place the bread halves, cut side up, on the baking sheet.

In a mixing bowl, stir together softened butter, olive oil, garlic, salt, and pepper. Spoon and spread the mixture evenly over the entire surface of both bread halves, ensuring the edges are coated to prevent burning.

Wrap the foil over the bread, crimp the edges together, and roll the ends of the foil up tightly. Bake in the preheated oven for 10 minutes.

Remove the bread from the oven, open the foil, and roll it inward to expose the bread. Sprinkle the bread evenly with shredded mozzarella and parmesan cheeses. Return to the oven and bake uncovered for an additional 5–6 minutes. Broil for the last 1–2 minutes if a crispier texture and golden cheese are desired, keeping a close eye to avoid burning.

Sprinkle the warm bread evenly with chopped parsley. Cut into slices and serve immediately.
