Cheesy One Pot Taco (Print Version)

One-pot taco pasta loaded with ground beef, spices, tomatoes, and cheddar that’s ready in under 30 minutes.

# Ingredients:

→ Main Ingredients

01 - 1 cup whole milk
02 - ½ yellow onion, diced
03 - 2 ½ cups shell pasta
04 - 2 cups cheddar cheese, shredded
05 - 2 cups beef broth
06 - ½ cup tomato sauce
07 - 10 ounces diced tomatoes with green chilies, undrained
08 - 1 bell pepper, diced
09 - 1 packet taco seasoning
10 - 1 pound ground beef

# Steps:

01 - Heat up a big skillet over medium heat. Toss in the ground beef, onions, and bell peppers. Stir and cook everything until the beef is browned and no more pink is visible. Drain off the grease that’s left and mix in the taco seasoning.
02 - Add the beef broth, whole milk, diced tomatoes with green chilies, tomato sauce, and shell pasta. Stir it all together and lower the heat to let it simmer. Cover with a lid and cook for about 10-15 minutes, giving it a stir now and then so nothing sticks. Cook until the pasta softens up.
03 - When the pasta’s done, sprinkle over the shredded cheddar cheese. Give it a good stir so the cheese melts smoothly into the mix. Serve right away and dig in.

# Notes and Tips:

01 - Tweak the seasoning and tomatoes to match your spice level—mild or hot, it’s up to you.
02 - The milk makes everything creamy and thickens the sauce by soaking up starch from the pasta.
03 - Feel free to swap cheddar with Velveeta, pepper jack, or whatever cheese you love.
