Set the oven to 350°F and grease a large baking dish (9x13 inches) with cooking spray.

Put the chopped potatoes in a pot of boiling water for 7 minutes, or until they're tender. Drain and spread in your greased dish.

In a skillet, add olive oil and cook the sausage slices until they’re nice and browned, about 5 minutes. Scatter over the potatoes.

Using the same pan, melt the butter with the flour. Stir it until the mix looks smooth and not powdery.

Stir in garlic, milk, heavy cream, cheddar soup, and all the seasonings (cumin, garlic powder, salt, black pepper). Let it thicken for about 3-4 minutes.

Take the sauce off the heat and mix in the shredded cheddar until it has completely melted.

Pour the cheesy sauce on top of the sausage and potatoes. Bake for 30 minutes, or until it’s all bubbly and golden.
