Turn on your oven to 350°F (175°C). Lay some parchment paper over your baking trays.

Grab a big bowl and beat together the soft butter, white sugar, and brown sugar until it’s fluffy and lighter in color.

Crack in one egg at a time and beat, then toss in the vanilla extract and combine.

In a separate bowl, stir together the flour, salt, and baking soda. Slowly work this mix into your butter base.

Fold the chopped maraschino cherries and chocolate chips gently into the dough.

Scoop tablespoon-sized drops of dough and spread them onto your prepared trays.

Bake in the heated oven for around 10-12 minutes, until the edges turn light golden brown.

Let the cookies rest on the trays for a couple of minutes. Then move them over to cooling racks to finish cooling completely.
