Greek Ground Chicken Bowls (Print-Friendly Version)

# Ingredients You'll Need:

→ Tzatziki

01 - 250 g coconut yogurt
02 - 45 g cucumber, chopped
03 - 2 teaspoons fresh dill, minced
04 - 1 teaspoon garlic powder
05 - A pinch of salt
06 - Juice of 0.25 lemon

→ Greek Salsa

07 - 125 g cucumber, chopped
08 - 35 g kalamata olives, sliced
09 - 35 g red onion, chopped
10 - Salt, to taste
11 - Black pepper, to taste
12 - Juice of 0.5 lemon
13 - 2 teaspoons fresh dill, minced
14 - 1 tablespoon fresh parsley, minced

→ Chicken Bowls

15 - 2 teaspoons olive oil
16 - 450 g ground chicken
17 - 1 teaspoon onion powder
18 - 1 teaspoon dried oregano
19 - 1 teaspoon garlic powder
20 - 1 teaspoon dried dill
21 - 1 tablespoon dried parsley
22 - Juice of 0.5 lemon
23 - Salt, to taste
24 - Black pepper, to taste
25 - Cooked rice or cauliflower rice, for serving

# How to Make It:

01 - Mix coconut yogurt, chopped cucumber, fresh dill, garlic powder, a pinch of salt, and lemon juice in a bowl. Stir well and chill in the fridge until you need it.
02 - Take a bowl and add chopped cucumber, red onion, sliced kalamata olives, fresh dill, parsley, lemon juice, salt, and pepper. Toss everything together and put it in the fridge to cool.
03 - In a large frying pan, warm up olive oil over medium heat. Add the ground chicken and break it up with a spatula. Cook until it's browned and fully cooked, then add garlic powder, onion powder, dried oregano, dill, parsley, salt, pepper, and lemon juice. Stir until everything is mixed well.
04 - Scoop cooked rice or cauliflower rice into 4 bowls. Place a portion of the seasoned ground chicken on top of each. Add Greek salsa and a hearty dollop of tzatziki. Enjoy right away!

01 - For meal prepping, keep the chicken and rice in separate containers from the salsa and tzatziki to keep them fresh.
02 - Cauliflower rice is a great low-carb swap for regular rice and adds more veggies to your meal.
03 - If you want to skip grain, use cassava orzo instead of rice.
