Chicken Feta Fries Skewers (Print-Friendly Version)

# Ingredients You'll Need:

→ Chicken Skewers

01 - 680 grams chicken breasts, cut into bite-size pieces
02 - 1 tablespoon lemon zest
03 - 1 teaspoon honey
04 - 15–45 ml harissa sauce or hot sauce
05 - 1 shallot, finely chopped
06 - 4 cloves garlic, finely chopped
07 - 2 teaspoons dried oregano
08 - 1 teaspoon chipotle chili powder
09 - 60 ml extra virgin olive oil
10 - Salt and freshly ground black pepper, to taste
11 - 250–500 ml Tzatziki sauce, for serving
12 - 120 ml garlic tahini, for serving

→ Feta Fries

13 - 4 russet potatoes, cut into 6 mm thick matchsticks
14 - 30 ml extra virgin olive oil
15 - 1 teaspoon garlic powder
16 - 2 tablespoons toasted sesame seeds
17 - 1 clove garlic, grated
18 - 0.25 teaspoon cayenne pepper
19 - 1 teaspoon lemon zest
20 - 75 grams feta cheese, crumbled
21 - Freshly ground black pepper, to taste
22 - 15 grams mixed fresh herbs (dill, basil, parsley), finely chopped
23 - Salt, to taste

# How to Make It:

01 - Heat the oven to 230°C.
02 - In a bowl, combine olive oil, shallot, garlic, oregano, honey, chipotle chili powder, lemon zest, harissa sauce, salt, and pepper. Toss the chicken pieces to coat. Let it marinate for 10 minutes to get more flavor if you've got time.
03 - Put the chicken on skewers and place them on a baking sheet. Roast for 20–25 minutes until they are charred and cooked through.
04 - In another bowl, mix the potato matchsticks with olive oil, garlic powder, black pepper, and cayenne. Spread them evenly on a different sheet pan.
05 - Roast the fries for 15–20 minutes. Turn them over and keep baking for another 15 minutes until they’re nice and crispy.
06 - In a mixing bowl, mix chopped herbs, lemon zest, grated garlic, sesame seeds, and crumbled feta. Once the fries are ready, toss them in the bowl with the feta mix and season with salt.
07 - Serve the chicken skewers and feta fries hot with Tzatziki sauce and garlic tahini on the side.
