Chicken Gloria Casserole (Print Version)

# Ingredients:

→ Chicken & Coating

01 - 4 boneless skinless chicken breast halves (8 ounces each)
02 - 1 cup all-purpose flour
03 - 1 teaspoon kosher salt
04 - 1/2 teaspoon white pepper

→ Fats

05 - 8 tablespoons butter
06 - 4 tablespoons extra virgin olive oil

→ Vegetables & Aromatics

07 - 1 pound cremini mushrooms, sliced
08 - 1 medium sweet onion, cut into strips
09 - 1 tablespoon minced garlic

→ Sauce

10 - 1/4 cup dry sherry wine
11 - 3 tablespoons all-purpose flour
12 - 1 cup chicken stock
13 - 1 1/2 cups heavy cream
14 - 8 ounces Muenster cheese, sliced

# Instructions:

01 - Butterfly each chicken breast half and cut in half to make eight 4-ounce pieces. Dredge twice in seasoned flour mixture
02 - Cook chicken in batches using butter and oil until browned. Transfer to prepared 9x13 casserole dish
03 - Brown mushrooms in fresh butter and oil, add to chicken. Cook onions and garlic in remaining fat
04 - Add sherry to pan, cook off. Add flour, then stock, then cream to make sauce. Pour over chicken and mushrooms
05 - Top with Muenster cheese, cover with parchment and foil. Bake at 375°F for 20 minutes, then broil to brown
