01 - 1 shredded rotisserie chicken
02 - 2 chopped celery stalks
03 - 230 grams sliced mushrooms
04 - 4 minced garlic cloves
05 - 1 medium diced onion
06 - 1 teaspoon dried thyme
07 - 2 sliced medium carrots
08 - Salt and black pepper, to taste
09 - 1,420 millilitres chicken broth

# How to Make It:

01 - Heat a splash of olive oil in a large pot over medium. Toss in the diced onions, sliced carrots, chopped celery, and minced garlic. Stir occasionally till the veggies are tender, around 5 to 7 minutes.
02 - Mix in the sliced mushrooms. Sauté for about 3 to 4 minutes until they let out their juices and soften.
03 - Add the chicken broth and let it come to a simmer.
04 - Mix in the shredded chicken and thyme. Allow it to simmer gently for 20 minutes to blend the flavors.
05 - Give it a taste and season with salt and fresh black pepper if needed.
06 - Spoon the warm soup into bowls and serve hot.
