Chicken Pineapple BBQ Melt (Print Version)

Crunchy bread packed with BBQ chicken, pineapple, and melty cheddar for a mix of savory and sweet goodness.

# Ingredients:

01 - 2 chicken breasts without skin or bones
02 - 1 cup tangy BBQ sauce (split in half)
03 - 8 slices of thick bread (like sourdough)
04 - 2 cups grated sharp cheddar cheese
05 - 12 thin pineapple strips (fresh or canned)
06 - Butter for spreading
07 - Cooking spray

# Steps:

01 - Turn your oven to 350°F (175°C) and preheat it. Put the chicken breasts into a baking dish that can handle high heat. Pour ½ cup of BBQ sauce over the top, making sure it's completely covered. Bake it for about 20 minutes, or until the chicken’s fully cooked. Once out, grab two forks and shred it well. Toss it in a bowl with the leftover ½ cup of BBQ sauce and mix it until it's all coated evenly.
02 - Spread butter on one side of each bread slice. Flip them so the butter’s facing down. Take 4 slices and add ¼ cup cheese to each. Pile on a quarter of the chicken mix over the cheese, then top with 3 pineapple slices per piece. Add another ¼ cup cheese on top. Place the other slices on top with the buttered side facing up. Gently press down using your hand or a spatula.
03 - Get a grill pan or skillet warmed up over medium heat and give it a spray with nonstick spray. Pop two sandwiches on, buttered side down, and cook for around 3-4 minutes until golden brown. Flip them over and cook the second side for 1-2 minutes until the color looks good. Do the same for the other two sandwiches.
04 - Slice the sandwiches in half and serve right away while they’re hot.
