Chipotle Lime Grilled Chicken (Print Version)

# Ingredients:

→ Chipotle Lime Chicken

01 - 3 tablespoons lime juice
02 - 1 1/2 tablespoons olive oil
03 - 1 chipotle chile in adobo sauce, finely chopped
04 - 2 tablespoons chopped cilantro
05 - 1 tablespoon honey
06 - Kosher salt and fresh ground black pepper to taste
07 - 1 1/2 pounds boneless skinless chicken breasts

→ Mango Salsa

08 - 2 cups diced mango
09 - 1/4 cup diced red onion
10 - 1/2 cup diced red bell pepper
11 - 2 tablespoons chopped cilantro
12 - 2 tablespoons lime juice
13 - 1/2 teaspoon chili powder
14 - Kosher salt and fresh ground black pepper to taste

# Instructions:

01 - In a bowl whisk together all of the ingredients for the chicken marinade. Pour the marinade into a freezer bag, add in the chicken breasts, press out all the air and seal the bag. Massage the marinade into the chicken then place it in the refrigerator for at least 2 hours or overnight.
02 - Heat the grill to 400° F. Spray the grates with cooking spray and place the chicken on the grill, shaking off any excess marinade. Grill the chicken for 6-8 minutes then flip and grill another 6-8 minutes. Grill until the internal temperature of the chicken is 165° F. Let the chicken rest for 5 minutes before slicing it.
03 - While the chicken is grilling prepare the mango salsa. Combine all of the ingredients in a bowl and stir to combine. Taste for seasoning and serve on top of the chicken.
