Chipotle Salmon Sushi Cups (Print-Friendly Version)

# Ingredients You'll Need:

→ Salmon Sushi Cups

01 - 680 g salmon fillet without skin, chopped into small pieces
02 - 1–2 tablespoons chopped chipotle peppers in adobo sauce
03 - 2 tablespoons mayonnaise
04 - Freshly ground black pepper, to taste
05 - 12 slices pickled sushi ginger
06 - Kosher salt, to taste
07 - 2 tablespoons tamari or soy sauce
08 - 320 g sushi rice cooked
09 - 1–2 tablespoons olive oil or sesame oil
10 - 12–24 nori seaweed sheets
11 - Avocado, sliced, for serving
12 - Green onion, thinly sliced, for garnish
13 - Sesame seeds, for garnish

→ Chipotle Mayo

14 - 80 g cream cheese
15 - 1–2 tablespoons chopped chipotle peppers in adobo sauce
16 - 80 ml mayonnaise
17 - 2 teaspoons tamari or soy sauce
18 - 1 teaspoon honey

# How to Make It:

01 - Set your oven to 200°C. Lightly oil a regular cupcake tin.
02 - In a bowl, mix the salmon pieces with mayonnaise, adobo chipotle, and tamari. Season it well with salt and black pepper.
03 - Add 1 to 2 slices of pickled ginger over the rice in each cup. Spoon the marinated salmon evenly into the nori cups. Drizzle with olive or sesame oil.
04 - Lay nori sheets on a cutting board. Spoon about 3 tablespoons of sushi rice onto each sheet, folding gently to create a cup. Place each into the prepared cupcake tin, using damp hands if the rice sticks.
05 - Take the sushi cups out of the tin carefully with a butter knife. Top each with avocado, green onion, and sesame seeds. Serve with tamari for dipping.
06 - Bake for 10–15 minutes until the salmon is cooked to your liking. In the last minute, switch to broil and broil for 1–2 minutes to crisp up the tops.
07 - In a small bowl, microwave the cream cheese for 20–25 seconds to soften it. Mix in mayonnaise, chopped chipotle, tamari, and honey until you get a smooth texture.
