Chocolate Chip Zucchini Muffins (Print Version)

Moist chocolate chip muffins with shredded zucchini and whole grains for wholesome flavor in every bite.

# Ingredients:

→ Dry Ingredients

01 - 1 1/2 cups spelt, white, oat, or gluten-free all-purpose flour
02 - 1/2 tsp baking soda
03 - 3/4 tsp salt
04 - 1/2 tsp cinnamon (optional)
05 - 1/2 cup sugar of choice or xylitol
06 - 1/2 cup chocolate chips (optional)

→ Wet Ingredients

07 - 1/2 cup applesauce
08 - 1/3 cup oil or substitute with applesauce for fat-free texture
09 - 1 tsp white or apple cider vinegar
10 - 1 1/2 tsp pure vanilla extract
11 - 1 cup grated zucchini

# Steps:

01 - Preheat oven to 175°C (350°F) and place 10-12 cupcake liners in a muffin tin.
02 - Combine all dry ingredients in a mixing bowl, then set aside.
03 - In a large measuring cup, combine all liquid ingredients, including zucchini.
04 - Mix the wet ingredients into the dry ingredients. Immediately portion the batter into the prepared muffin cups.
05 - Place the muffin tin in the oven and bake for 19 minutes. Allow the muffins to cool before removing them from the tray.
