Combine chocolate chips and coconut oil in microwave-safe bowl. Microwave in 30-second intervals, stirring between, until smooth.

Stir vanilla extract into melted chocolate mixture.

Dip each strawberry in chocolate, allowing excess to drip off. Optionally roll in crushed nuts.
