Combine dry ingredients (except powdered sugar) in a mixing bowl or stand mixer. Stir in wet ingredients to form a dough.

Cover and freeze the dough until chilled, or refrigerate it overnight.

Preheat the oven to 300°F (150°C).

Roll the chilled dough into balls, then cover them in powdered sugar.

Place the coated dough balls on a baking sheet and bake for 12 minutes. The cookies should look underdone when removed from the oven.

Allow cookies to cool fully before handling. They will firm up during this time.

Store leftovers in a covered container for up to five days.
