Marbled Chocolate Berry Cheesecake (Print Version)

# Ingredients:

→ Crust

01 - 2 cups chocolate cookie crumbs (about 20 cookies)
02 - 6 tablespoons unsalted butter, melted

→ Filling

03 - 3 blocks (230g) cream cheese, softened
04 - 1 cup granulated sugar
05 - 3 large eggs
06 - 1 teaspoon vanilla extract
07 - 1/2 cup sour cream
08 - 1/2 cup chocolate sauce or melted chocolate chips
09 - 1 cup fresh strawberries, sliced

→ Garnish

10 - 1/2 cup chocolate ganache
11 - 8-10 fresh strawberries, whole or halved

# Instructions:

01 - Mix cookie crumbs and butter, press into 9-inch springform pan. Bake at 325°F for 8 minutes, cool.
02 - Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
03 - Pour half batter over crust, add sliced strawberries and chocolate. Top with remaining batter and swirl with knife.
04 - Place in water bath, bake 60-70 minutes at 325°F. Cool in oven 1 hour, then refrigerate 4+ hours.
05 - Top with chocolate ganache and fresh strawberries before serving.

01 - Use room temperature cream cheese
02 - Water bath prevents cracking
03 - Best chilled overnight
