Preheat the oven to 175°C and grease a mini muffin tin. In a bowl, whisk together the egg, cottage cheese, vanilla extract, and honey (or maple syrup) until smooth. Stir in oat flour, baking powder, cinnamon, nutmeg, and salt. Carefully fold in the diced apple.

Fill each muffin cup 3/4 full with batter. Bake for 15-18 minutes until golden brown and a toothpick inserted in the center comes out clean. Let the bites cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
