Mix dark brown sugar and cinnamon together in a bowl.

Using one loaf of thawed dough at a time, roll it on a floured surface into a rectangle measuring 15 x 7 inches. Spread it liberally with melted butter, then sprinkle with ⅓ of the cinnamon-sugar mixture. Optionally, add raisins, nuts, chocolate, or other fillings.

Starting at the long edge, roll the dough tightly into a jelly roll shape. Cut the roll in half, then cut each half into 4 equal pieces, creating 8 slices per loaf.

Place the cinnamon roll slices in a circular pattern in a greased 8- or 9-inch cake pan. Repeat with the remaining dough. To rise overnight, cover with plastic wrap and refrigerate. Allow to come to room temperature 30 minutes before baking. Otherwise, let the rolls rise for 1 hour in a warm place before baking.

Preheat the oven to 400°F (200°C). Brush the rolls with any remaining melted butter and bake for about 15 minutes or until golden brown.

While the rolls are baking, combine softened butter, powdered sugar, cream cheese, and vanilla extract in a mixer or food processor. Blend until fluffy and smooth.

Spread the icing over the warm cinnamon rolls. Serve immediately or freeze for later. To reheat, thaw and warm in the microwave.
