Classic Minestrone Soup (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil
02 - 1 onion, chopped
03 - 2 carrots, sliced
04 - 2 celery stalks, diced
05 - 2 cloves garlic, minced
06 - 1 zucchini, diced
07 - 1 cup green beans, trimmed and cut
08 - 1 can (14 oz) diced tomatoes
09 - 4 cups vegetable broth
10 - 1 teaspoon dried oregano
11 - 1 teaspoon dried basil
12 - Salt and pepper to taste
13 - 1 cup small pasta (like ditalini)
14 - Fresh parsley, chopped (for garnish)

# Steps:

01 - Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
02 - Stir in the garlic and cook for another minute until fragrant.
03 - Add the zucchini, green beans, diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring the mixture to a boil.
04 - Once boiling, reduce the heat and simmer for about 15 minutes until the vegetables are tender.
05 - Add the pasta to the pot and cook according to package instructions until al dente.
06 - Serve hot, garnished with fresh parsley.
