Cream Cheese Chicken Bacon (Print Version)

# Ingredients:

01 - 8 slices of bacon
02 - 4 chicken breasts, skinless and boneless
03 - 2 garlic cloves, finely chopped
04 - 8 oz cream cheese, softened to room temperature
05 - 1 tbsp parsley, diced fresh
06 - 1 tbsp chives, minced
07 - Salt and black pepper, adjust as needed
08 - Toothpicks to hold things together

09 - 1 cup chopped fresh spinach
10 - 1/2 cup shredded cheese (cheddar or pepper jack)

# Steps:

01 - Set your oven to 375°F and get a baking sheet ready by covering it with parchment paper.
02 - Grab a meat mallet and gently pound the chicken breasts until they’re about 1/4-inch thick so they roll up easily.
03 - In a smaller bowl, blend the cream cheese with parsley, chives, garlic, plus some salt and pepper until smooth and creamy.
04 - Sprinkle salt and pepper over both sides of the flattened chicken pieces.
05 - Take a couple of tablespoons of the cream cheese mix and smear it down the middle of each piece of chicken, leaving a small clean edge.
06 - Roll each piece up tightly, starting at one end, so the filling stays inside. Use toothpicks to keep things in place if needed.
07 - Take two slices of bacon and wrap them around each rolled chicken breast, making sure the ends are tucked under.
08 - Lay the chicken rolls seam-side down on the prepared pan. Cook for 25-30 minutes or until the chicken reaches 165°F internally and the bacon is crisp.
09 - After baking, give the chicken a 5-minute rest before slicing it up. Dig in while it’s warm!
