Creamy Pumpkin Oatmeal Breakfast (Print Version)

Smooth pumpkin oatmeal with spices and sweetener, topped with nuts or fruit, for a cozy breakfast.

# Ingredients:

01 - 1/2 cup rolled oats
02 - 1 cup milk of choice
03 - 1/3 cup pumpkin puree or pie filling or mashed sweet potato
04 - 1/2 tsp pumpkin pie spice or substitute cinnamon
05 - scant 1/4 tsp salt
06 - 2-3 tbsp sweetener of choice or as desired
07 - optional 2 tbsp almond or coconut butter
08 - optional 1/4 tsp pure vanilla extract
09 - toppings of choice – crushed walnuts or pecans, raisins, sliced banana, extra milk of choice, coconut milk, or nondairy creamer

# Steps:

01 - Bring all ingredients except vanilla to a boil. Stir continuously until thickened.
02 - Turn off the heat and stir in vanilla if using. Serve hot or cold.
03 - Optionally, prepare in the microwave or use a slow cooker. For a slow cooker, quadruple the recipe and cook on high for 3 hours.

01 - For a creamier texture, top the oatmeal with coconut milk or nondairy creamer.
