Cozy Creamy Vegetable Soup (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 tablespoon olive oil or neutral oil
02 - 4 cloves of garlic, minced
03 - 1 medium white onion, chopped
04 - 3 medium carrots, chopped
05 - 4 stalks of celery, chopped

→ Soup Base

06 - 1/3 cup dairy-free butter
07 - 1/3 cup all-purpose flour
08 - 4 cups veggie broth
09 - 1 cup unsweetened dairy-free milk (soy milk recommended)
10 - 3 tablespoons nutritional yeast

→ Vegetables & Proteins

11 - ½ cup frozen corn
12 - 1 cup frozen peas
13 - 1 cup chickpeas or white beans (optional)

→ Seasonings

14 - 1 teaspoon salt
15 - 1/2 teaspoon pepper
16 - 1/2 teaspoon fresh rosemary
17 - 1/2 teaspoon fresh oregano
18 - 1/2 teaspoon fresh thyme

# Instructions:

01 - Heat a large pot on medium heat. Add oil, onions, carrots, celery, garlic, and salt. Cook for 5 minutes until onions are translucent.
02 - Add butter to pot. Once melted, add flour and mix to coat vegetables. The roux will be thick and sticky.
03 - Slowly add vegetable broth, pepper, oregano, thyme, and rosemary. Mix until well combined.
04 - Stir frequently until soup reaches a gentle boil and begins to thicken. Keep stirring to prevent burning.
05 - Add peas, corn, nutritional yeast, chickpeas, and milk. Cook for 5-7 minutes on low heat until peas and corn are warm.

01 - Can substitute fresh herbs with dried herbs
02 - Add more broth if soup becomes too thick
03 - Recipe can be doubled for larger families
