Crockpot Beef Tips Gravy (Print Version)

Slow-cooked chuck roast bites in rich mushroom gravy; perfect comfort food over potatoes or rice.

# Ingredients:

→ Beef

01 - 2-3 pounds chuck roast, diced into 1-inch pieces

→ Seasonings

02 - ½ teaspoon black pepper
03 - ½ tablespoon garlic powder
04 - ½ tablespoon onion powder

→ Sauce

05 - 1 Au Jus gravy packet
06 - ½ packet Lipton onion soup mix
07 - 14.5 ounces beef broth
08 - 10.5 ounces beefy mushroom soup
09 - 1 tablespoon cornstarch

→ Cooking Fat

10 - 2 tablespoons olive oil

# Steps:

01 - Add the chuck roast pieces to a large mixing bowl. Pour in 1 tablespoon of olive oil and season with black pepper, garlic powder, and onion powder. Toss until evenly coated.
02 - Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the beef pieces in a single layer to avoid overcrowding. Sear for 2-3 minutes on each side until golden brown. Repeat in batches if necessary.
03 - In a large bowl, whisk together the beef broth, beefy mushroom soup, Lipton onion soup mix, and Au Jus gravy packet until well combined.
04 - Transfer the seared beef and gravy mixture to the crockpot. Stir to combine. Cook on low for 6-8 hours or high for 3-4 hours.
05 - In a small bowl, mix 1 tablespoon of cold water with 1 tablespoon of cornstarch until dissolved. Add to the crockpot and stir. Let sit for 5 minutes to thicken.
06 - Serve the beef tips and gravy over rice or mashed potatoes and enjoy.
